Here's the thing about New York style pizza in Philadelphia: it shouldn't work. You're two hours from the source, the water is different, the coal ovens aren't here in the same concentrations, and Philadelphians have their own pizza traditions. And yet some of the best foldable-slice pizza we've eaten anywhere has been in Philly. The city has quietly figured out how to do New York style on its own terms.

What Makes True New York Style

The New York slice is defined by a few non-negotiable characteristics. The fold: a proper NY slice is large enough and supple enough to fold in half lengthwise — the "book fold" — without cracking. If it cracks, the dough is too cold or too dry. The bottom: caramel-brown, with a slight crunch that gives way to a chewy interior. The cheese: low-moisture mozzarella, distributed from edge to near-edge, with some browning on the peaks. The sauce: cooked, seasoned, not too thick, with enough acidity to cut through the cheese's richness.

And the grease. New York pizza has grease. This is not a defect — it's a feature. The rendered fat from the mozzarella pools slightly on the surface of a properly made NY slice. You fold it, the grease runs toward the point, and the first bite gets a concentrated hit of every flavor at once. If there's no grease, something is wrong with the cheese.

The Philadelphia Advantage

Philadelphia has something that actually works in favor of good New York style pizza: excellent independent restaurant culture. New York's pizza scene is dominated by a few iconic names and hundreds of mediocre by-the-slice shops that survive on tourist foot traffic. Philadelphia doesn't have that problem. The mediocre shops don't survive long here because the city's diners are less forgiving of bad value.

This means the New York style pizza that does exist in Philly has had to actually earn its customers. The best spots we've visited are doing things with NY style that match anything you'd get in the city itself — and sometimes exceed it.
